This will be a short post again today. I am still sick. It’s been a week. And this is a sinus cold. I hate those. It’s like you’re not so sick that you need to stay in bed all day, but you feel bad and everything is in a fog. Ugh!
I might need to go see a doctor, if this keeps up. Double ugh! There are a lot of logistics involved, with three kids at home.
I have one fun thing to share. I tried a making risotto in the crockpot tonight and it came out super yummy.
I love making risotto. Strike that, I love risotto, but I hate making it. The standing and stirring is tiring. Plus, with three boys, I get called away from the kitchen to break up fights a lot, expecially at that time of day when everyone is tired and hungry.
Back to the recipe, I used this one, but I substituted onion for shallots and chicken stock for the wine. I also folded in peas with the Parmesan.
The only negative was that I would reduce the oil a bit next time. I normally use a weight watchers risotto recipe which uses less oil, so it seemed oily to me.
Other than that, it was very good and oh so easy.

That recipe is on a website called Just Slow Cooking. They boast 6,156 recipes. I am going to have to go back and check it out some more. I love my slow cooker. And what’s not to love? Good food, minimal effort.
